Equipment
- 1 Smoker I use a Traeger Pellet Smoker
- 1 Butcher Paper
- 1 Spray Bottle
Ingredients
- 1-3 Rack of your favorite Pork Rib
- 1 Bottle Mustard
- 1 Bottle Your favorite pork rub
- 1 Bottle Your favorite BBQ Sauce
- 1 Cup Apple Cider Vinegar
- 1/4 Cup Packed Brown Sugar
- 8 Oz Butter
Instructions
- Preheat: Preheat your smoker to 225℉
- Prepping your Ribs: Using a boning knife lift up the corner of the membrane on the back of the ribs and firmly pull to remove the membrane. Trim any excess fat off the ribs as needed.
- Seasoning: Coat both sides of your ribs using the mustard to create a binder, then season both sides of the ribs using your favorite pork rub.
- Smoke: Place your ribs bone down on the smoker and allow your ribs to cook for 4 hours. At this time, add your apple cider vinegar to a squirt bottle (you can also do a 50/50 mix of water / vinegar) and spray the ribs every hour to keep them moist.
- Smoke Continued: After 4 hours, set your smoker to 275℉ and allow your ribs to cook for another 1 hour spraying with your apple cider vinegar every 15 minutes.
- Sauce: On a flat surface lay your butchers paper down. On the butcher paper add some of your BBQ sauce, half your brown sugar, and a few slices of butter. After smoking at 275℉ for one hour, carefully remove the ribs from the smoker and lay on top of the BBQ sauce on the butcher paper. Now coat the top of the ribs with BBQ sauce, the other half of your brown Sugar, butter, and spray with your apple cider vinegar. Wrap the ribs tightly in the butchers paper.
- Smoke Continued: Add the ribs wrapped in the butchers paper bone down to the smoker for an additional 30 minutes.
- Rest: Remove your ribs from the smoker and allow to rest for 15 minutes.
- Serve: Carefully remove the ribs from the butchers paper (be careful of the hot steam), slice into individual ribs, serve, and enjoy!
